Easy Summer Cucumbers

              These are Mr. Darcy's favorite and super easy. They are an excellent side dish for summer fare.

Easy Summer Cucumbers

6 English Cucumbers, peeled and sliced.
1 small red onion cut in small pieces or thin slices
1/2 cup chopped parsley (curly, not flatleaf)
                                                         1 cup rice wine vinegar
                                                                1/2 cup sugar

Toss all ingredients in a large bowl. Enjoy right away or keep in refrigerator.

  1. Looks yummy! I love cucumbers and make a recipe with cukes, tomatoes, spring onions and a mayo-sugar-vinegar dressing. It has taken me years to get it just like my mother in laws but I've finally succeeded : )
